Chicken Pot Pie with Baking Powder Biscuits

Chicken Pot Pie with Baking Powder Biscuits

Leftover Chicken in my house quite often results in Chicken Pot Pie.  I always like having a plan for any leftovers.  Cleaning out the fridge and filling a garbage bag is really quite sad and very expensive.

Ingredients (Filling)

  • 1 Onion
  • 6 tbsp butter or hard margarine
  • 6 tbsp flour
  • 3 cups of milk
  • 1 tsp poultry seasoning
  • 3-4 cups of leftover cooked chicken
  • 3-4 cups mixed frozen veggies
  • Salt and Pepper to taste

  1. Preheat oven to 450°
  2. Cut up your chicken
  3. Melt the butter in a pot medium low heat
  4. Dice the onion
  5. Sauté the onion in the butter until translucent.
  6. Add the flour
  7. Stir with a whisk until it is sizzling
  8. Add the milk
  9. Whisk to make a smooth white sauce
  10. Add the Poultry Seasoning, Salt and Pepper
  11. Bring to a simmer and it will start to thicken
  12. Add the chicken and frozen veggies to a large casserole dish
  13. Add the white sauce.
  14. Stir
  15. Place some of the biscuits on top
  16. Bake for 15 minutes
  17. Add the remaining biscuit on a tray
  18. Bake additional 12 minutes

Baking Powder Biscuits

  • 1 3/4 cups flour
  • 1/2 tsp salt
  • 3 tsp baking powder
  • 6 tbsp butter or hard margarine
  • 3/4 cup milk

  1. In a mixing bowl mix together the flour, salt and baking powder
  2. Use a pastry blender or 2 dinner knives to cut the butter into the flour mixture until butter is the size of peas
  3. Add the milk
  4. Stir together until it forms a loose ball
  5. Turn out onto a floured surface
  6. Kneed about 10 times
  7. Flatten out with you palms or a rolling pin until about 1/2 inch think
  8. Cut into twelve pieces
  9. Bake 10-12 minutes at 450° (This step is included above)

This a favorite in our household, tasty, cheap, uses leftovers, easy to make and quick.  The reason that I put some of the biscuits on top and some on a tray is for two reasons.  First in my casserole dish they won’t all fit.  Second my daughter prefers them on the side buttered.  I have also made it without the poultry seasoning and extra salt and pepper.  I like it either way but my wife prefers it with the poultry seasoning.  In this case the leftover chicken was BBQ Chicken thighs and it made enough to have leftovers of the Chicken Pot Pie as well.

  1. I like to buy two chickens at the same time, take away and throw out the skin after which pick the particular bones thoroughly clean of meats breaking it into modest shreds or perhaps pieces. Naturally, I’m going to snack at the chicken while I am accomplishing this yet I do not really feel guilty, only comforted! The following area a some of the issues I actually do with the chicken to restore last in a variety of methods. Adjust the amount you eat to function the volume of people at your desk.

  2. I’ve invited the family to ours this xmas for a traditional dinner, so the roast is pretty central to that.. I found an archive of recipes at this roast recipe site, but cant decide on anyone – there’s too many to choose from! It’s fun planning such a big family meal though!
