In my life this week…
This week I have been catching up from being away for a week. As I mentioned in an earlier post we are getting new windows. By doing so we get a rebate from the government but we had to have a home energy audit done first. We also have to have one done at the end to ensure that we actually had the work done. That revealed that we only had r12 in the attic. The rebate for fixing that is about 60% of the overall cost so we had it done. We now have r50 and boy can I tell the difference.
This week was also my littlest one’s 4th Birthday. We had dinner and presents at Grandma’s but we haven’t had a kids party yet. This led to some interesting discussions. First he decided that he needed two birthdays which my daughter was trying to explain was impossible. I stepped in and asked if he knew what a birthday meant. He didn’t which led to the discussion of where he came from. The funniest line came from my daughter when she explained to him “Mommy has the eggs in her and Daddy has the fertilizer.” While correct made me think of plant fertilizer. We explained the difference.
In our homeschool this week…
If you heard a scream coming from up north that was me discovering that my next portfolio is due in two weeks. After panicking I thought it through and went through what we had done. He has some work to finish up and one to do completely but it wasn’t the “Ahhh We have nothing done!’ that I originally thought.
He has to:
Finish his rewrite of his essay on James Cook and draw a map
Do a Timeline of the TransCanada Railway
Write up an experiment that we did towing cans up various slopes.
Finish his Kinex Simple Machines (Videos)
Essay on White Jade Tiger
Edit his report on the Chinese Garden.

Things I’m working on…
I have 18 day to get ready for the window installers. They need access and some of the windows are blocked by boxes. Simply moving them would either block passages or other windows. Time to sort…
I’m cooking…
With the money that we spent on eating out down in Vancouver, this week was what can I make with what is in the house. Fortunately there is a third of a cow in the freezer. One of my standard dishes is Salsa Chicken that I can make either in the oven or the crockpot. Easy, yummy and all my kids will eat it.

Recipe for Salsa Chicken pretty please?
Salsa Chicken
About 2.5 lbs Boneless Skinless Chicken Thighs
2 cups Salsa
1 cup Brown Sugar
I use my largest Corningware and mix everything together in it. Bake at 400 for an hour or in the crockpot all day. I prefer the oven version as I get some carmelization.
I am planning on starting a homeschooler recipe linkup. So many I’ve meet are good, down to earth cooks. I have a couple of more thing to get organized first though.
