Corn Flake Cookies

This is my daughter’s favorite cookies and they rank pretty highly with my wife as well. They are basically Spice Cookies with the added crunch of Corn Flakes. I always make a triple batch which is the biggest I can fit in my Kitchen Aid mixer. I always put parchment paper down on my cookie sheets to make getting them off and cleaning up easier.

I don’t know the source of this recipe. It has been in my recipe box for ages and has been recopied out at least once due to damage. I don’t remember my mother ever making these so I probably got it off a friend in university.

Ingredients
  • ½ Cup Margarine
  • ½ Cup Brown Sugar
  • ½ Cup Sugar
  • 1 Egg
  • ½ Tsp Vanilla
  • 1 Cup Flour
  • 1 Tsp Baking Powder
  • ¼ Tsp Salt
  • ½ Tsp Cinnamon
  • ¼ Tsp Ginger
  • ¼ Tsp Nutmeg
  • ⅛ Tsp Cloves
  • 1½ Cups Corn Flakes
Instructions
  1. Cream the butter and both sugars together. Beat in the egg and vanilla. In a separate bowl mix together all the dry ingredients except the corn flakes. Slowly add the dry ingredients to the wet and beat it. Beat in the corn flakes. Drop by spoonfuls onto a cookie sheet.
