Homeschool Journal Year 2 Week 17

In my life this week…

This was the week of doctor visits, the boring routine kind but it meant I drove all over the place this week. I went through a quarter of a tank of gas in one day. I did get this wonderful picture of a sunset at my wife’s work. Her building is actually behind me. I love how the sunset is reflected in the building.

In our homeschool this week…

We are getting way to close to portfolio time so it is time to finish up projects and get everything documented. So that has been what we have been working on this week. It has been mostly writing. Why is it that always seems to be one of the last ones to get finished. I am ready for this portfolio to be done and move on to the next semester. Still have to much to finish up first.

Margaret has also done some watercolor paintings this week. I found an instructional DVD at the library that she watched. The distance learning school that we are enrolled with also has an upcoming watercolor workshop that I have signed her up for.

I’m working on…

We made some really good progress on cleaning up the house last weekend. Hopefully another couple of weekends will set it right.

I’m cooking…

We are trying to eat healthier. Years ago when I started being a SAHD I moved us away from pre-processed food and back to making most everything from scratch. It took a couple of months to eliminate most of it and there is still some stuff that I would like to get rid of. Most of it is in the treat category. I plan on using the same methods as before but I think it will take even longer to pull off.

This week I made a very veggie heavy sausage and cashew stir fry. We also did veggie burritos, two different ways. I had my way and my wife had a recipes. So 6 of each kind. Unfortunately the consensus was in favor of mine. I did a Waldorf salad with chicken thighs on the side. I mixed mine in but that is part of the strategy. Some like things separate and some like them all together. If I offer them separately then those that want to mix, can and those that don’t, won’t. It was that same with the cashew, I had them on the side.

We also did a dinner out of my Jamie Oliver Cookbook, Secret steak & chips, garlicky green beans. It was wonderful, particularly the sauce. The cookbook has imperial measures but the Pinterest pin is in UK measures.

I’m praying for…

Our support teacher. She was diagnosed will ALS (Lou Gehrig’s Disease) just before Christmas. She has has to shed some of her students so she could manage. We are one of the families that she is keeping. She is doing well considering and she would appreciate any prayers.

  1. That is a cool photo of the sunset. I love Margaret’s water color! I especially love her sky! I’m sorry to hear about your support teacher’s diagnosis. That’s got to be devastating. I’ll add her to my prayer list.
