Bean Meatballs and Pineapple

One of my family’s favorite dinners is Beans, Meatballs and Pineapple. It is as simple as the title suggests. One of the things that I like about it is that you can easily reduce the amount of meat in it to make it stretch.

The recipe came from my wife’s family and has been modified to have more beans. This one is high on the meatballs but I have done it with less meat and bulked it out with more beans. The meatball recipe can also be altered to your standard meatballs. Everyone makes them different.

Ingredients
  • 1½ lbs Ground Beef
  • 1 small Onion Chopped Fine
  • 2 eggs
  • ¾ c Quick Oats
  • Parsley Flakes
  • Garlic Powder to taste
  • 1 28 Fl oz Can of Baked Beans (I use Molasses ones)
  • 1 14 Fl Oz Can of Pineapple Tidbits (NOT Drained)
Instructions
  1. Mix together the Ground Beef, Onion, Eggs, Oats, Parsley Flakes and Garlic Powder. Form into 1 inch balls. Bake at 350 for 30 minutes. Drain the grease. Add the pineapple and beans. Mix together and bake another 30 minutes uncovered.
