
Our household budget for food is $400/month, that’s for a family of 5. That means that I tend to buy large cheap cuts of meat. Generally I cook the whole thing for the first night and then have to come up with ways to use the leftovers that everyone will eat. If it is different enough its no longer leftovers.
One of my favorite ways to use leftovers is to make a frittata. This is one of those meals that doesn’t have a set recipe. The basics are potatoes and onions, some kind of meat, eggs, veggies and cheese.
- 3-4 small potatoes
- 1 large onion
- 1 Green Pepper (if you have one)
- Leftover meat, Ham, pork, sausages and chicken work well.
- Leftover Veggies (Broccoli, Cauliflower work great but just about anything you like will work.)
- 5-6 eggs
- Grated cheese
Put an oven safe frying pan on med to med high heat. Dice the potatoes into about 1/4 inch cubes. Dice the onion and Green Pepper. Add to the frying pan and brown. Cut the meat up. Smaller pieces if you need to make it stretch. Reduce the heat to med-low. Add the meat to warm through. Add the veggies cutting them small. Beat the eggs in a bowl. Add salt and pepper to taste. Pour over mixture in the frying pan. It should almost cover everything. Swirl the pan to spread the eggs. Spread some grated cheese over the top. I prefer cheddar. Put in a 350deg oven for 15 minutes or until the eggs have set. Serve. Feed my family of five with rarely any leftovers.
I like it with salsa and sour cream if they are in the house, plain if not. Its quick and easy to make and a great way to use leftovers.

First up congratulations to @MrMomWorld for his win in the first Dad’s Can Cook Contest. He made an Eggplant Parmesan that made me think of trying Eggplant again. Bad childhood memories there :-).
Unfortunately he was the only entry. After some thought on that I decided that it was too short of a time frame and a difficult first challenge. Therefore I am changing it to a monthly challenge. The first month being October. I have also gone with an easier challenge for this month.
There has been a lot of talk lately on football. I was following both the Seahawk and Patriots games on Sunday while I worked just by following my twitter feed. I live in British Colombia and remember watching the Seahawks with my dad and thus they became my team. This was before the 1000 channel universe of today so we got the Seahawks game but my dads team is the Patriots. We would watch them whenever they were on so I ended up following two teams. I remember going to Seattle to watch a game between the Seahawks and the Patriots. At the time we were distantly related to the Patriots kicker and got to meet the team. I think I was too excited to see the game to worry about who to cheer for.
So this weeks challenge is Sunday Football Snacks
First up there are no prizes involved in this just the recognition of a job well done.

Recently I have seen a number of tweet about dads cooking. Yesterday there was Pulled Pork and Chicken Parmesan. I have a number of recipes on my blog and cook all the time. I especially love cooking with my daughter from rice crispy squares to ‘Turtlellini’ her name for tortellini. I thought a contest to show that dads can cook would be a cool idea. Moms are welcome to. I would like to run this contest again with different themes in the future.
Last Nights #DadsTalking chat was about date nights and one of the question was about what food our wives liked. For my wife anything seafood is going to be a hit. Scallops are quite high on the list and also happen to be a seafood that I will eat that’s not standard Fish and Chips. So that is quite often what I cook for her on special occasions. So this weeks contest will be to create a date night dinner for your wife (or husband for the moms). Take a picture of it, artistry will count and blog about with the recipe. Sell me on the dish.
